A hearty but soft loaf made with freshly-milled ancient grains of spelt and kamut.

Freshly milled flour retains more of the original grain's nutrients, including fiber, vitamins (B vitamins, vitamin E), and minerals (iron, magnesium, potassium, zinc). It's also high in antioxidants, protein, phytochemicals, and minerals. In fact whole grain wheat is truly good for you.

Spelt is more water-soluble than modern wheat, and some find it easier to digest. 

Kamut contains the highest amount of protein of any other grain, providing 9.8 grams per 1-cup serving.
